Directions
Preheat oven to 350 degrees. Prepare two 9-inch cake pans by rubbing with butter, sprinkling with flour and tapping out extra. In a large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Mix together with a wooden spoon then set aside. In small bowl combine eggs, milk, oil and vanilla. Beat well with hand mixer. Slowly add boiling water and mix. Add wet ingredients to flour mixture and fold and stir until smooth. Pour batter into pans, dividing evenly. Bake for 30-35 minutes. Remove cake from pans and cool on racks.</description>

***MOUSE***

1/2 cup sifted powdered sugar

1 teaspoon vanilla
***TOPPING***
6 ounces chopped semisweet chocolate
2 tablespoons whipping cream
2 tablespoons butter
2 tablespoons corn syrup
Fresh berries 
 

Directions:

Preheat oven to 350 degrees. Grease and flour three 9-inch round cake pans. 

TO MAKE CAKE: Melt the chocolate, butter and water over medium heat. Set aside. In a large bowl, beat the sugar, eggs, buttermilk and vanilla with an electric mixer until well combined. In a small bowl, stir together the flour, salt and baking soda. Add the dry ingredients to the egg mixture alternately with the chocolate mixture, beginning and ending with the dry ingredients. Mix well. 

Pour into prepared pans and bake for 30 minutes or until the cake springs back when lightly touched on top and pulls away from the sides of the pan. Cool slightly and remove from pans. Cool completely on wire racks. 

TO MAKE GANACHE: Heat cram until hot and tiny bubbles form around the sides of the pan. Stir in chocolate until melted. Cover and refrigerate until thickened, about 2 to 3 hours. 

TO MAKE MOUSE: In the large bowl of an electric mixer, beat the cream until it starts to thicken. Add the powdered sugar and cocoa to desired color and taste. Add vanilla and beat until stiff. Refrigerate until ready to use. 

TO ASSEMBLE: Place 1 layer of cake on a serving plate. Spread with ganache and then with mousse. Place second layer on top of mousse. Spread second layer with ganache and mousse. Place third layer on top. Spread remaining ganache around sides of cake. 

TO MAKE TOPPING: Combine the chocolate, cream, butter and corn syrup and heat until just melted. Stir until smooth. Pour over top of cake. Arrange berries over the top if desired.
